Ingredients
  • 4 cup Rhubarb
  • 1 cup Granulated sugar
  • 1 teaspoon Orange zest
  • 1 teaspoon Cardamom
  • 1 cup All-purpose flour
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 2 tablespoon Ice water
  • 1 beaten Egg
  • 1 tablespoon Turbinado sugar
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine rhubarb, granulated sugar, orange zest, and cardamom. Let it sit for 15 minutes.
  3. In a separate bowl, mix flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough comes together.
  4. Divide the dough into two portions, one slightly larger than the other. Roll out the larger portion and fit it into a 9-inch pie dish.
  5. Pour the rhubarb filling into the pie crust.
  6. Roll out the remaining dough and cut it into strips. Create a lattice pattern on top of the filling.
  7. Brush the lattice with beaten egg and sprinkle with turbinado sugar.
  8. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Allow the pie to cool for at least 30 minutes before serving.
