Rhubarb Lattice Pie with Cardamom and Orange

Preheat the oven to 375°F (190°C).

In a large bowl, combine rhubarb, granulated sugar, orange zest, and cardamom. Let it sit for 15 minutes.

In a separate bowl, mix flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough comes together.

Divide the dough into two portions, one slightly larger than the other. Roll out the larger portion and fit it into a 9-inch pie dish.

Pour the rhubarb filling into the pie crust.

Roll out the remaining dough and cut it into strips. Create a lattice pattern on top of the filling.

Brush the lattice with beaten egg and sprinkle with turbinado sugar.

Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.

Allow the pie to cool for at least 30 minutes before serving.
