Ingredients
  • 12 ounce Pie crust
  • 3 cup Fresh rhubarb
  • 1 cup Granulated sugar
  • 3 unit Eggs
  • 1 cup Milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoon All-purpose flour
  • 1/4 teaspoon Salt
  • 2 tablespoon Unsalted butter
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and press it into a 9-inch pie dish.
  3. In a mixing bowl, combine the rhubarb and sugar. Let it sit for 15 minutes to release the juices.
  4. In another bowl, whisk together the eggs, milk, vanilla extract, flour, and salt.
  5. Pour the rhubarb mixture into the pie crust. Then pour the custard mixture over the rhubarb.
  6. Dot the top of the pie with small pieces of butter.
  7. Bake for 45-50 minutes, or until the custard is set and the crust is golden brown.
  8. Remove from the oven and let it cool for at least 30 minutes before serving.
