  • 1.5 cup Pie crust
  • 1 pound Rhubarb
  • 1 cup Granulated sugar
  • 2 tablespoon Cornstarch
  • 0.25 teaspoon Salt
  • 1 cup Heavy cream
  • 3 large Egg yolks
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, combine the rhubarb, sugar, cornstarch, and salt. Mix well.
  4. In a separate bowl, whisk together the heavy cream, egg yolks, and vanilla extract.
  5. Pour the cream mixture over the rhubarb mixture and stir until well combined.
  6. Pour the filling into the pie crust.
  7. Bake for 45 minutes, or until the crust is golden and the filling is set.
  8. Remove from the oven and let it cool for at least 2 hours before serving.
