Rhubarb is often referred to as the ‘pie plant’ due to its popular use in pies and other baked goods.

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk.

Spread half of the batter into the prepared cake pan. Top with half of the rhubarb, brown sugar, cinnamon, and walnuts. Repeat the layers.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
