Preheat the oven to 350°F (175°C). Grease and flour a 9x9 inch baking dish.

In a medium bowl, combine the rhubarb, 1/2 cup of sugar and let it stand for 15 minutes.

In another bowl, cream together the butter and 1/2 cup of sugar until light and fluffy. Beat in the egg and vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture.

Spread half of the batter into the prepared baking dish. Top with the rhubarb mixture, then spoon the remaining batter over the rhubarb.

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
