Rhubarb is often mistaken for a fruit, but it is actually a vegetable!

  1. Preheat the oven to 180°C (350°F) and grease a cake pan.
  2. Wash and trim the rhubarb stalks, then cut them into small pieces.
  3. In a mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk.
  6. Fold in the rhubarb pieces.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cake cool in the pan for 10 minutes.
  10. Transfer the cake to a wire rack and let it cool completely.
  11. Serve and enjoy!
