Preheat the oven to 180°C (350°F).

Grate the carrots.

In a large bowl, combine the whole wheat flour, almond flour, baking powder, cinnamon powder, nutmeg powder, and sea salt.

In a separate bowl, mix together the coconut oil, maple syrup, almond milk, and vanilla extract.

Add the grated carrots, raisins, and chopped walnuts to the wet mixture.

Gradually add the wet mixture to the dry ingredients and mix well.

Grease a loaf pan with coconut oil and pour the batter into the pan.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.
