Ingredients
  • 1 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 2 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 0.5 teaspoon Salt
  • 1 cup Whole Milk
  • 1 teaspoon Red Food Coloring
  • 1 teaspoon Blue Food Coloring
  • 1 cup Cream Cheese
  • 1 cup Powdered Sugar
  • 1 cup Heavy Cream
  • 1 cup Fresh Blueberries
  • 1 cup Fresh Raspberries
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  4. Divide the batter into three equal portions. Leave one portion plain, color one portion red using the red food coloring, and color the remaining portion blue using the blue food coloring.
  5. Drop spoonfuls of each colored batter onto the prepared baking sheet, alternating colors to create a marbled effect. Use the back of a spoon to gently swirl the colors together.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely.
  7. In a medium bowl, beat together the cream cheese, powdered sugar, and heavy cream until smooth and creamy.
  8. Spread a dollop of the cream cheese mixture onto the flat side of one cookie. Top with a few blueberries and raspberries. Place another cookie on top, flat side down, and gently press together. Repeat with the remaining cookies and filling.
  9. Serve immediately or refrigerate until ready to serve.
