  1. In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  2. Gradually add the cold water, 1 tablespoon at a time, tossing with a fork until the dough forms a ball.
  3. Divide the dough into 4 equal portions and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. In a separate bowl, gently toss together the red raspberries, golden raspberries, wild black raspberries, cornstarch, lemon juice, and vanilla extract.
  6. Roll out each dough portion on a lightly floured surface to fit the mason jars.
  7. Place one dough portion in each mason jar, pressing it against the bottom and sides.
  8. Divide the berry mixture evenly among the mason jars.
