-
Gradually add the cold water, 1 tablespoon at a time, tossing with a fork until the dough forms a ball.
-
Divide the dough into 4 equal portions and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
-
Preheat the oven to 375°F (190°C).
-
In a separate bowl, gently toss together the red raspberries, golden raspberries, wild black raspberries, cornstarch, lemon juice, and vanilla extract.
-
Roll out each dough portion on a lightly floured surface to fit the mason jars.
-
Place one dough portion in each mason jar, pressing it against the bottom and sides.
-
Divide the berry mixture evenly among the mason jars.
-
Roll out the remaining dough portions and cut into strips to create a lattice pattern on top of each pie.
-
Brush the lattice tops with the beaten egg and sprinkle with turbinado sugar.
-
Place the mason jars on a baking sheet and bake for 20 minutes, or until the crust is golden brown.
-
Remove from the oven and let cool for 1 hour before serving.
