  1. Preheat the oven to 180°C (350°F).
  2. In a large pan, melt the butter and sauté the chopped onion until translucent.
  3. Add the diced chicken and cook until browned.
  4. Stir in the flour and cook for a minute.
  5. Gradually add the chicken stock and milk, stirring constantly until the sauce thickens.
  6. Add the sliced carrots, frozen peas, salt, and pepper. Cook for 5 minutes.
  7. Transfer the mixture to a pie dish.
  8. Roll out the puff pastry and cover the pie dish with it, trimming any excess pastry.
  9. Beat the egg and brush it over the pastry.
  10. Bake in the preheated oven for 30-40 minutes, until the pastry is golden brown.
  11. Allow the pie to rest for 15 minutes before serving.
