  • 1 cup Almond Meal
  • 1 cup Medjool Dates
  • 1 cup Cashews
  • 1 cup Coconut Cream
  • 0.5 cup Key Lime Juice
  • 0.25 cup Maple Syrup
  • 0.25 cup Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Key Lime Zest
Instructions
  1. In a food processor, combine almond meal and dates until a sticky crust forms. Press the crust into a pie dish.
  2. In the same food processor, blend cashews, coconut cream, key lime juice, maple syrup, coconut oil, vanilla extract, and key lime zest until smooth and creamy.
  3. Pour the filling onto the crust and spread evenly.
  4. Refrigerate for at least 3 hours to set.
  5. Serve chilled and enjoy!
