Ingredients
  • 1.5 cup Raw Cashews
  • 1 cup Medjool Dates
  • 2 tablespoon Coconut Oil
  • 0.5 cup Key Lime Juice
  • 0.25 cup Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lime Zest
  • 1 cup Almond Flour
  • 0.25 cup Shredded Coconut
  • 1 pinch Salt
Instructions
  1. In a food processor, blend the raw cashews until finely ground. Add the Medjool dates, coconut oil, key lime juice, maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
  2. In a separate bowl, mix together the almond flour, shredded coconut, lime zest, and a pinch of salt.
  3. Press the almond flour mixture into the bottom of a pie dish to form the crust.
  4. Pour the cashew filling over the crust and smooth the top with a spatula.
  5. Place the pie in the refrigerator to set for at least 4 hours or overnight.
  6. Once set, garnish with additional lime zest and serve chilled.
