Peel and core the apples or pears.

In a food processor, blend the dates, almonds, oats, cinnamon, vanilla extract, lemon juice, and honey or maple syrup until a sticky mixture forms.

Press half of the mixture into the bottom of a cake pan.

Slice the apples or pears thinly and arrange them on top of the mixture in the cake pan.

Press the remaining mixture on top of the sliced apples or pears.

Cover the cake pan and refrigerate for at least 2 hours to allow the cake to set.
