  1. Prepare a food processor and add the almonds, coconut flour, cinnamon, and salt. Process until finely ground.
  2. Add the dates, vanilla extract, and lemon juice. Process until the mixture sticks together when pressed.
  3. Take out 1/3 of the mixture and set aside for later use.
  4. Add the peeled and cored apples to the remaining mixture in the food processor. Process until well combined.
  5. Press the apple mixture into the bottom of a lined cake pan.
  6. Spread the reserved almond mixture over the apple layer.
  7. Cover the cake pan with plastic wrap and refrigerate for at least 1 hour to set.
  8. Remove from the pan, slice, and serve.
