  3. Soak the gelatin sheets in cold water for a few minutes. Squeeze out excess water and dissolve the gelatin in the warm raspberry puree.
  4. In a mixing bowl, beat the cream cheese and powdered sugar until smooth. Add the raspberry mixture and mix well.
  5. In a separate bowl, whip the whipping cream until soft peaks form. Gently fold the whipped cream into the raspberry mixture.
  6. Pour the mixture over the biscuit base in the cake tin. Smooth the top with a spatula.
  7. Refrigerate for at least 2 hours or until set.
