In a large bowl, mix the all-purpose flour, granulated sugar, and salt. Cut the cold unsalted butter into small cubes and add it to the bowl. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

Gradually add cold water, 1 tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a small bowl, mix the raspberries and cornstarch until the raspberries are coated.

On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Use a heart-shaped cookie cutter to cut out hearts from the dough.

Place half of the heart-shaped dough pieces onto the prepared baking sheet. Spoon a small amount of the raspberry mixture onto each piece, leaving a border around the edges. Place another heart-shaped dough piece on top of each filled piece and press the edges together to seal.
