Raspberries are technically not berries, but rather aggregate fruits made up of many smaller fruits called drupelets.

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together the egg, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Spread half of the batter into the prepared cake pan. Sprinkle with half of the raspberries.
  5. In a small bowl, mix together the brown sugar, cinnamon, and chopped walnuts. Sprinkle half of this mixture over the raspberries.
  6. Repeat the layers with the remaining batter, raspberries, and brown sugar mixture.
  7. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Serve and enjoy!
