Rainbow cake with vanilla buttercream icing

Preheat the oven to 350°F (175°C) and grease three 8-inch round cake pans.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Divide the batter evenly into 6 bowls. Add a different food coloring to each bowl and mix well.

Spoon each colored batter into the prepared cake pans, alternating colors to create a rainbow effect.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.

In a large bowl, cream together the butter, powdered sugar, and vanilla extract until smooth and creamy. Gradually add the milk and continue to beat until light and fluffy.

Place one cake layer on a serving plate and spread a layer of buttercream icing on top. Repeat with the remaining cake layers.

Decorate the top of the cake with additional buttercream icing and sprinkle with rainbow sprinkles, if desired.

Let the cake rest for at least 1 hour before serving to allow the flavors to meld together.
