Rainbow Cake

Rainbow Cake is also known as a unicorn cake due to its vibrant and magical appearance.

Preheat the oven to 350°F (175°C). Grease and flour three 8-inch (20 cm) round cake pans.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients.

Divide the batter evenly into 6 bowls. Add a different food coloring to each bowl and mix until well combined.

Spoon a small amount of each colored batter into the prepared cake pans, creating rainbow layers. Use a toothpick or skewer to swirl the colors together slightly.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Remove from the oven and let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

In a mixing bowl, beat together the cream cheese, powdered sugar, and heavy cream until smooth and creamy.

Place one cake layer on a serving plate and spread a layer of the cream cheese frosting on top. Repeat with the remaining cake layers, finishing with a layer of frosting on top.

Decorate the cake with rainbow sprinkles.

Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
