Rainbow cake is also known as a unicorn cake due to its vibrant and colorful layers.

  1. Preheat the oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients alternately with the milk.
  5. Divide the batter evenly into three separate bowls. Add food coloring to each bowl and mix until desired color is achieved.
  6. Pour the colored batters into the prepared cake pans and smooth the tops with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
  9. Once the cakes are cooled, stack them on top of each other with a layer of frosting in between each layer. Frost the top and sides of the cake.
  10. Let the cake rest for at least 1 hour before serving to allow the flavors to meld together.
  11. Slice and serve.
