Ingredients
  • 2 cup All-purpose flour
  • 1.5 cup Granulated sugar
  • 0.5 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 cup Buttermilk
  • 0.5 cup Vegetable oil
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Boiling water
  • 0.5 cup Butter
  • 2 cup Powdered sugar
  • 2 tablespoon Milk
  • 0.5 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Stir in boiling water to the batter. The batter will be thin, but that's okay.
  5. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  7. In the meantime, prepare the frosting. In a mixing bowl, beat butter until creamy. Gradually add powdered sugar, milk, and vanilla extract. Beat until smooth and creamy.
  8. Once the cake has cooled, frost it with the prepared frosting.
  9. Let the cake rest for at least 1 hour before serving.
  10. Enjoy your delicious Racetrack Cake!
