Spinach pie, also known as ‘Torta Pasqualina’, is a traditional Italian Easter dish.

Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

Add frozen spinach and cook until heated through. Remove from heat and let cool.

In a mixing bowl, whisk together eggs, ricotta cheese, parmesan cheese, salt, and black pepper.

Add the cooked spinach mixture to the bowl and mix well.

Roll out the pie crust and place it in a 9-inch pie dish. Trim the edges if necessary.

Pour the spinach mixture into the pie crust and spread it evenly.

Top with shredded mozzarella cheese.

Bake in the preheated oven for 35-40 minutes, or until the crust is golden and the filling is set.

Remove from the oven and let it rest for 10 minutes before serving.
