  1. Boil potatoes until tender, then drain and mash.
  2. In a separate bowl, mix the mashed potatoes and quark cheese.
  3. Add flour, eggs, salt, and black pepper to the potato-cheese mixture. Knead until the dough is smooth.
  4. Roll out the dough on a floured surface and cut out circles using a glass or a cookie cutter.
  5. Place a spoonful of the potato-cheese filling in the center of each circle and fold the dough over, sealing the edges.
  6. Boil the pierogies in salted water for about 5 minutes or until they float to the surface.
  7. Heat butter in a skillet and fry the pierogies until golden brown on both sides.
  8. Serve hot with sautéed onions on top and a dollop of sour cream.
