Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the milk. Mix until just combined.
  5. Divide the batter evenly into three bowls. Add purple gel food coloring to one bowl and mix until the desired shade is achieved.
  6. Pour each batter into a separate cake pan and smooth the tops. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let cool in the pans for 10 minutes. Transfer to a wire rack to cool completely.
  8. In a small saucepan, combine the blackberries, sugar, and lemon juice. Cook over medium heat until the blackberries break down and the mixture thickens, about 10 minutes. Remove from heat and let cool.
  9. Place one cake layer on a serving plate. Spread a layer of blackberry compote on top. Repeat with the remaining cake layers and compote.
  10. Frost the sides of the cake with whipped cream and garnish with fresh blackberries.
  11. Chill the cake in the refrigerator for at least 1 hour before serving.
