Ingredients
  • 2 cup Glutinous rice flour
  • 1/2 cup Granulated sugar
  • 1 cup Water
  • 2 piece Pandan leaves
  • 1/2 cup Grated coconut
  • 1/4 teaspoon Salt
Instructions
  1. In a mixing bowl, combine glutinous rice flour, sugar, and water. Mix well until a smooth batter is formed.
  2. Add pandan leaves to the batter and mix again.
  3. Steam the batter over medium heat for 20 minutes.
  4. Remove the pandan leaves and let the steamed cake cool for 10 minutes.
  5. Cut the cake into bite-sized pieces.
  6. In a pan, heat some oil and fry the cake pieces until golden brown.
  7. Remove from the pan and drain on a paper towel.
  8. In a separate pan, toast the grated coconut with a pinch of salt until fragrant.
  9. Serve the fried rice cakes with the toasted coconut on top.
