  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Add the pumpkin puree and mix until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients.
  7. Drop spoonfuls of the batter onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are firm.
  9. Remove from the oven and let cool on the baking sheets for 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely.
  11. In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  12. Spread a dollop of the cream cheese filling on the flat side of one cookie and sandwich with another cookie.
  13. Repeat with the remaining cookies.
  14. Serve and enjoy!
