  • 1 cup Pumpkin puree
  • 1/2 cup Vegetable oil
  • 3/4 cup Brown sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 cup Raisins
Instructions
  1. Preheat the oven to 350°F (175°C). In a large bowl, mix together the pumpkin puree, vegetable oil, brown sugar, eggs, and vanilla extract. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the raisins. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
