  • 1.5 cup Pumpkin puree
  • 1 cup Granulated sugar
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 1 package Cream cheese
  • 0.5 cup White chocolate chips
  • 0.5 cup Powdered sugar
  • 2 tablespoon Milk
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, mix together the pumpkin puree, sugar, oil, eggs, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the bars are cooling, prepare the frosting. In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between, until smooth.
  8. In a separate bowl, beat the cream cheese until creamy. Gradually add the powdered sugar and melted white chocolate, mixing until well combined.
  9. Once the bars have cooled completely, spread the frosting evenly over the top.
  10. Refrigerate for at least 1 hour to allow the frosting to set.
  11. Cut into bars and serve.
