  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the pumpkin puree, granulated sugar, eggs, evaporated milk, cinnamon, ginger, nutmeg, salt, and cornstarch. Mix well.
  3. Pour the mixture into the pie crust and smooth the top.
  4. Bake for 15 minutes, then reduce the oven temperature to 350°F (175°C) and continue baking for 40-45 minutes, or until the filling is set.
  5. In the meantime, prepare the meringue by beating the egg whites and cream of tartar until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
  6. Once the pie is done baking, remove it from the oven and let it cool for 10 minutes.
  7. Spread the meringue over the pie, making sure to seal the edges.
