  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, cinnamon, ginger, nutmeg, and salt. Mix well.
  3. In a separate bowl, whisk together the egg and heavy cream. Add this mixture to the pumpkin mixture and stir until well combined.
  4. In a small saucepan, melt the butter over medium heat. Add the flour and cook for 1-2 minutes, stirring constantly, until the mixture forms a thick paste.
  5. Remove from heat and gradually add the pumpkin mixture, stirring until smooth.
  6. Roll out the pie crust and cut out circles using a round cookie cutter. Place a spoonful of the pumpkin filling onto each circle.
  7. Fold the circles in half and seal the edges by pressing with a fork.
  8. Place the hand pies on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown.
  9. Allow the hand pies to cool for 10 minutes before dusting with powdered sugar. Enjoy!
