  • 1 cup Pumpkin puree
  • 1/2 cup Vegetable oil
  • 3/4 cup Brown sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1 3/4 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground ginger
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Baking soda
  • 1/4 cup Chopped crystallized ginger
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, mix together the pumpkin puree, vegetable oil, brown sugar, eggs, and vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground ginger, salt, and baking soda.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped crystallized ginger.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
