  1. Preheat the oven to 350°F (175°C). In a large bowl, mix together the pumpkin puree, cream cheese, eggs, vegetable oil, and vanilla extract. In a separate bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped walnuts. Spoon the batter into muffin cups, filling each about 3/4 full. In a small bowl, mix together the ingredients for the walnut streusel topping: chopped walnuts, brown sugar, and cinnamon. Sprinkle the streusel over the muffin batter. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool for 10 minutes before removing them from the muffin tin. Enjoy!
