  • 1.5 cup Graham cracker crumbs
  • 0.5 cup Butter, melted
  • 1 package Cream cheese, softened
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 1 cup Canned pumpkin puree
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground nutmeg
  • 1 cup Whipped cream
  • 0.25 cup Pecan halves
Instructions
  1. Preheat the oven to 325°F (165°C).
  2. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch pie dish.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Pour half of the cream cheese mixture over the crust.
  4. In a separate bowl, mix together the pumpkin puree, cinnamon, ginger, and nutmeg. Pour the pumpkin mixture over the cream cheese layer.
  5. Carefully spoon the remaining cream cheese mixture over the pumpkin layer, spreading it evenly.
  6. Bake for 55-60 minutes, or until the center is set. Remove from the oven and let it cool for 2 hours.
  7. Refrigerate for at least 4 hours or overnight.
  8. Before serving, garnish with whipped cream and pecan halves.
