  • For the cake:

  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Ground cloves
  • 1/2 cup Unsalted butter, softened
  • 3/4 cup Granulated sugar
  • 1/4 cup Brown sugar
  • 2 Eggs
  • 1/2 cup Pumpkin puree
  • 1/4 cup Sour cream
  • 1 teaspoon Vanilla extract
  • For the streusel topping:
  • 1/4 cup All-purpose flour
  • 1/4 cup Brown sugar
  • 1/2 teaspoon Cinnamon
  • 2 tablespoon Unsalted butter, melted
  • For the brown sugar glaze:
  • 1/2 cup Brown sugar
  • 2 tablespoon Unsalted butter
  • 2 tablespoon Milk
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ground cloves.
  3. In a large bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the pumpkin puree, sour cream, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a small bowl, prepare the streusel topping by combining the all-purpose flour, brown sugar, cinnamon, and melted unsalted butter. Mix until crumbly.
  6. Pour half of the cake batter into the prepared cake pan. Sprinkle half of the streusel topping over the batter. Repeat with the remaining batter and streusel topping.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the brown sugar glaze. In a small saucepan, melt the unsalted butter over medium heat. Stir in the brown sugar, milk, and vanilla extract. Cook, stirring constantly, until the mixture comes to a boil. Remove from heat.
  9. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
  10. Drizzle the brown sugar glaze over the cooled cake. Serve and enjoy!
