  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  3. Add the chicken breast and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the flour and cook for 1 minute, stirring constantly.
  5. Slowly whisk in the chicken broth and heavy cream. Cook until the mixture thickens.
  6. Stir in the frozen mixed vegetables, salt, and black pepper. Cook for an additional 2 minutes.
  7. Remove the skillet from the heat and let the filling cool slightly.
  8. Roll out one sheet of puff pastry and line a pie dish with it. Spoon the filling into the dish.
  9. Place the second sheet of puff pastry on top and pinch the edges to seal. Cut a few slits in the top to allow steam to escape.
  10. Brush the top of the pastry with beaten egg.
  11. Bake for 30-35 minutes, or until the pastry is golden brown and the filling is bubbly.
