  1. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add onion, garlic, red bell pepper, green olives, raisins, sofrito, adobo seasoning, and sazon seasoning to the skillet. Cook until vegetables are softened.
  3. Remove skillet from heat and let the filling cool.
  4. Place a spoonful of the filling onto each empanada disc. Fold the disc in half and seal the edges by pressing with a fork.
  5. Heat vegetable oil in a large skillet over medium-high heat. Fry the empanadas until golden brown on both sides.
  6. Remove from skillet and drain on paper towels.
  7. Serve hot and enjoy!
