  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, granulated sugar, baking powder, and salt.
  3. In a small saucepan, heat milk and butter until butter is melted. Remove from heat and stir in vanilla extract.
  4. Add the milk mixture and egg to the dry ingredients. Mix well until smooth.
  5. Pour half of the batter into a greased baking dish.
  6. In a separate bowl, mix cocoa powder and brown sugar. Sprinkle this mixture evenly over the batter in the baking dish.
  7. Pour boiling water over the cocoa mixture. Do not stir.
  8. Bake for 30 minutes or until the cake is set.
  9. Let the pudding cake rest for 60 minutes before serving.
  10. Serve warm with ice cream or whipped cream, if desired.
