  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the dry ingredients and cut it in with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Dice the prosciutto and pear into small pieces. Grate the cheddar cheese.
  5. Add the prosciutto, pear, and cheddar cheese to the flour mixture and stir until evenly distributed.
  6. In a separate bowl, whisk together the egg and milk.
  7. Pour the egg mixture into the flour mixture and stir until just combined.
  8. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
  9. Pat the dough into a 1-inch thick round and cut it into 8 wedges.
  10. Place the scones on a baking sheet lined with parchment paper.
