Boil the potatoes until tender, then peel and mash them.

In a large bowl, combine the mashed potatoes, grated Parmesan cheese, beaten eggs, breadcrumbs, salt, and black pepper. Mix well.

Take a small portion of the potato mixture and flatten it in your palm. Place a slice of prosciutto on top and fold the potato mixture over it, shaping it into a cake.

Heat vegetable oil in a frying pan over medium heat. Fry the potato cakes until golden brown on both sides.
