  1. In a large saucepan, combine the pork shoulder, pork belly, onion, garlic cloves, thyme, bay leaves, salt, black pepper, and water. Bring to a boil and then reduce the heat to a simmer. Cook for 2 hours or until the pork is tender.
  2. Remove the pork from the saucepan and allow it to cool. Once cooled, shred the pork into small pieces.
  3. In a separate bowl, mix the flour and butter together until it resembles breadcrumbs. Add the eggs and mix until a dough forms.
  4. Divide the dough into two portions, one slightly larger than the other. Roll out the larger portion and line a greased pie dish.
  5. Fill the pie dish with the shredded pork and cover with the rolled-out pastry lid.
  6. Bake in a preheated oven at 180°C (350°F) for 45-60 minutes or until the pastry is golden brown.
  7. Allow the pie to rest for 1 hour before serving.
  8. Serve the pork pie warm or cold.
