  2. In a large bowl, combine the plums, lemon juice, and 1/4 cup of granulated sugar. Set aside.
  3. In a separate bowl, mix the flour, oats, remaining sugar, cinnamon, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  4. In a small bowl, beat the egg, milk, and vanilla extract together. Add to the dry ingredients and stir until just combined.
  5. Spread half of the batter into the prepared cake pan. Top with the plum mixture. Drop spoonfuls of the remaining batter over the plums.
