  1. Preheat the oven to 180°C (350°F).
  2. Wash and pit the plums, then cut them into slices.
  3. In a bowl, mix the ricotta cheese, honey, and ground cinnamon.
  4. Melt the butter in a saucepan.
  5. Brush a sheet of filo pastry with melted butter and place it in a pie dish.
  6. Repeat with the remaining filo pastry sheets, overlapping them slightly.
  7. Spread the ricotta mixture evenly over the filo pastry.
  8. Arrange the plum slices on top of the ricotta mixture.
  9. Sprinkle the almonds on top.
  10. Fold the edges of the filo pastry over the filling.
  11. Bake in the preheated oven for 40 minutes, or until the filo pastry is golden brown.
  12. Allow the pie to cool for 10 minutes before serving.
