  2. In a small bowl, beat the egg and vanilla extract. Add to the flour mixture and stir until the dough comes together.
  3. Divide the dough into two equal portions and shape each into a disc. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
