  1. Preheat the oven to 180°C (350°F). Grease and flour a round cake pan.
  2. In a food processor, grind the pistachios until fine. In a medium bowl, whisk together the ground pistachios, flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and honey.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  7. In a mixing bowl, beat the mascarpone cheese, powdered sugar, and heavy cream until thick and creamy.
  8. Once the cake has cooled, slice it in half horizontally. Spread a layer of the mascarpone cream on the bottom half of the cake. Top with fresh berries. Place the top half of the cake on top and spread the remaining mascarpone cream on top.
  9. Serve the pistachio honey cake with berries and mascarpone cream chilled.
