  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse the pistachios until finely ground.
  3. In a bowl, combine the ground pistachios, melted butter, and sugar. Press the mixture into a pie dish to form the crust.
  4. Bake the crust for 10 minutes, then remove from the oven and let it cool.
  5. In a saucepan, heat the heavy cream, milk, sugar, cornstarch, vanilla extract, and salt over medium heat. Stir continuously until the mixture thickens.
  6. Remove the saucepan from heat and stir in the green food coloring.
  7. Pour the filling into the cooled pie crust and refrigerate for at least 4 hours.
  8. Before serving, top the pie with whipped cream and chopped pistachios.
