  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, combine the rhubarb, pineapple chunks, granulated sugar, cornstarch, lemon juice, vanilla extract, and ground cinnamon. Mix well.
  4. Pour the filling into the pie crust.
  5. Dot the top of the filling with small pieces of butter.
  6. Cover the pie with the second pie crust, sealing the edges.
  7. Cut slits in the top crust to allow steam to escape.
  8. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.
