  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Pineapple juice
  • 1 tablespoon Orange zest
  • 1/4 cup Orange juice
  • 1/2 cup Crushed pineapple
  • 1 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan or line a cupcake tray with liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the pineapple juice and orange zest. Fold in the crushed pineapple.
  5. Pour the batter into the prepared pan or cupcake liners.
  6. Bake in the preheated oven for 25-30 minutes for cupcakes or 35-40 minutes for a cake, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake/cupcakes to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. In a small bowl, whisk together the orange juice and powdered sugar to make the glaze. Drizzle the glaze over the cooled cake/cupcakes.
