  • 2 cup Flour
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Butter
  • 1 cup Sugar
  • 2 large Eggs
  • 1/2 cup Coconut milk
  • 1/2 cup Pineapple juice
  • 1 teaspoon Vanilla extract
  • 1/2 cup Crushed pineapple
  • 1/2 cup Shredded coconut
  • 1 cup Whipped cream
  • optional for garnish Maraschino cherries
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, combine the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the coconut milk, pineapple juice, and vanilla extract.
  4. Gradually mix in the dry ingredients until just blended. Fold in the crushed pineapple and shredded coconut.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Once cooled, spread whipped cream over the top of the cake. Garnish with maraschino cherries, if desired.
  8. Serve and enjoy!
