Pina Colada Cake

The Pina Colada Cake is inspired by the popular tropical cocktail, the Pina Colada, which originated in Puerto Rico.

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together flour, baking powder, and salt.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in coconut milk, pineapple juice, and vanilla extract.

Gradually add the flour mixture to the wet ingredients, mixing until just combined. Fold in shredded coconut and crushed pineapple.

Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once the cake has cooled, frost with whipped cream and decorate with pineapple slices and maraschino cherries.
